Ingredients

For Chicken Skewers

  • 3 chicken breast, cut into long thin stripes
  • 1 tbsp dark soy sauce
  • 2 garlic cloves, peeled and crushed
  • 200 ml coconut milk
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp ground ginger

For Satay Sauce

  • 3 heaped tsp smooth peanut butter
  • 1 tbsp dark soy sauce
  • 1/2 tsp chilli flakes
  • 1 tbsp fish sauce
  • 200 ml coconut milk
  • 1 tbsp light brown sugar
  • 1/2 tsp ground coriander
  • juice of 1 lime

For Serving

  • 1 fresh red chili thinly sliced
  • 2 tbsp fresh coriander, chopped
  • 1/2 tsp chili flakes
  • 1/4 red onion, peeled and finely sliced
  • 1 tbsp roasted peanuts, roughly chopped
  • 1 tsp sesame seeds

For Chicken Skewers

  1. In a large bowl, add chicken breast strips, soy sauce, garlic, coconut milk, cumin, ground coriander, and ground ginger. Mix and marinate them well until the chicken breast stripes properly coated.
  2. Now, cover and refrigerate for 30 minutes.
  3. After 30 minutes, arrange the marinated chicken in skewers.
  4. Then grease the griddle pan with oil.
  5. Now grill on a griddle pan until cooked thoroughly or for 10 minutes. You can also cook them on the barbeque.

For Satay Sauce

  1. In a pan, add peanut butter, soy sauce, chilli flakes, coconut milk, fish sauce, brown sugar, ground coriander, and lemon juice. Mix well and stir.
  2. Cook on medium flame until thickened. Stir in between.
  3. Turn off the heat, and it is ready to serve.

For Serving

  1. Place a skewer on a plate and along with the bowl of satay sauce.
  2. Then sprinkle chilli flakes, fresh coriander, sesame seeds.
  3. Add chopped red onions and few roughly chopped peanuts on top of it.
