Tandoori Cheela- Karth Food Factory

Crepes and pancakes are famous all over the world and they are prepared differently in every country, according to their local ingredients and flavours. In India, they are called “Cheela”. In middle India, thin green cheelas are made with gram flour or rice flour batter, ginger garlic paste, cumin seeds, green chilli, curry leaves, coriander leaves, oil, salt, and water batter. It is cooked on a flat pan.

Ingredients

Tandoori Cheela

For tandoori masala

  • 1 tsp cumin seeds
  • 2 tsp coriander seeds
  • 2 black cardamom
  • 3-4 cloves
  • 1 tbsp black pepper
  • ½ tsp mustard seeds
  • ¼ tsp carom seeds
  • 1 tbsp Kasuri methi
  • ¼ tsp fenugreek seeds
  • 2-3 tbsp degi red chilli powder
  • ¼ tsp asafetida
  • ½ tsp chaat masala
  • Salt to taste

For Tandoori Marination

  • 3 tbsp prepared tandoori masala
  • 1 tsp ghee
  • 1 ½ big cup curd
  •  2-3 cloves
  • 1 coal
  • 1 tbsp mustard oil
  • 3 tbsp prepared tandoori masala

For Filling

  • ¼ small cauliflower, chopped
  • 1 small carrot, chopped
  • 1 medium capsicum, chopped
  • ¼ small cabbage, chopped
  • 1 medium onion, sliced
  • ½ prepared marination

For Cheela

  • ¾ cup gram flour
  • ½ prepared tandoori marination
  • 1 tbsp oil
  • 1 tsp ghee
  • ½ cup grated cheese
  • A pinch of baking soda
  • Water as required

For Serving

  • Green chutney
  • Fresh veggies salad

Method

For Tandoori Masala

  1. In an add, cumin seeds, coriander seeds, black cardamom, cloves, black peppers, Kasuri methi, mustard seeds.
  2. Roast them properly. Remove and let it cool.
  3. Now them to a grinder jar and add salt, and make a fine powder.
  4. Transfer it to a bowl and add degi red chilli powder, mango powder, asafetida, and chaat masala; mix it well.

For Marination

  1. Transfer it to a bowl and add degi red chilli powder, mango powder, asafetida, and chaat masala; mix it well.
  2. In a mixing bowl, add curd, prepared tandoori masala, ginger garlic paste and mustard oil, mix it properly.
  3. Keep a lump of coal on the flames to burn. Once hot, transfer it to a small bowl and add cloves and ghee to it.
  4. Place this small bowl in the mixing bowl and cover it for 5-6 minutes.

For Filling

  1. Firstly, in a bowl, add chopped vegetables and the prepared marination, mix it well. Keep aside for 10 minutes.
  2. Secondly, heat a pan on a high flame and add the marinated vegetables, sauté it for 4-5 minutes.

For Cheela

  1. In a mixing bowl, add gram flour, prepared tandoori marination, water, baking soda, oil, mix well and make a smooth batter.
  2. Secondly, heat a pan on medium flame and then add a big spoon of batter and spread it; after that, add some ghee and cook until golden brown.
  3. After that, on one side, add the filling and grated cheese and fold it.
  4. Once cooked, transfer into a plate.

Serve it with green chutney and veggies salad. This can be served during breakfast or even as an evening snack.
